Salted Caramel Chia Seed Pudding

We’re serving up dessert for breakfast with this one.
I was just as surprised as you are to learn that prunes blended with salt, cinnamon and honey taste like salted caramel. Who knew!? So naturally, I turned it into breakfast.
The natural sweetness from the prunes here comes with lots of fibre too, so you don’t have to worry about a blood sugar spike in the morning. Not to mention the milk, yogurt, peanut butter, and chia seeds here to balance it out.
Ingredients
-6 pitted California Prunes
-1/4 cup chia seeds
-1 cup milk (any kind)
-1/4 tsp salt
-1-2 tsp honey (sweetness up to you)
-1/4 tsp cinnamon
-2 equal sized containers
-batch 1 chia pudding (above)
-1 cup Greek yogurt
-2 tbsp peanut butter
-1 sliced banana
Directions
Blend prunes, chia seeds, milk, salt, honey and cinnamon until there are no chunks of prunes left. The chia seeds may still be intact.
Layer this equally in the containers with greek yogurt, peanut butter, and banana slices. Let sit overnight in the fridge and enjoy in the morning.
