
Herby Cotage Cheese Dip- a new favourite bright snack!
It should come as no surprise that as a dietitian and a veggie lover, every meal has some colour. It's both intentional, and happens sort of naturally because I love foods with colour. They're typically crunchy and bright and necessary to balance out some of the richer flavours and dishes we love to eat.
So of course when we had some family over for take out chicken wings, I knew I wanted to make a bright and flavourful dip to go with crispy crunchy vegetables. Typically, wings are served with crudite and a ranch or blue cheese dip. I originally set out to make my own ranch dip, but realized I actually had no idea what the flavour of 'ranch' really was. It's not something I grew up with, so it's not exactly a familiar or nostalgic flavour.
Like I always do, I used what I had, hoped for the best and tasted along the way. With ingredients like fresh herbs, dried dill, lots of lemon and scallions, I'm not surprised I ended up loving it. And even better, everyone else loved it too. I won't lie and say it upstaged chicken wings (when they're good, they're fantastic) but it was a welcome pop of colour on our table.
Here's how to make it:
Ingredients:
500g cottage cheese
zest and juice of 1 lemon, or more to taste
4 scallions
1 handful parsley, leaves and tender stems
1 tsp dried dill
1/4tsp granulated garlic
salt and pepper to taste
Directions:
Here's the really great part- all you have to do is blend! I used my handheld immersion blender and didn't even need to pull out my big and powerful blender for this one.
Serve with crackers, pita, raw sliced veggies or anything else you like to use as a dipper.
